Delicious midnight snack recipe; death by chocolate cupcakes

The craving of chocolates on odd times makes me to fill up my refrigerator with some Choco bites all the time. Knowing my chocolates craze my family and friends used to send chocolates to me every now and then.  But there are events when I get bored with chocolate as candy bars and need something chocolaty other than chocolates.  For this reason I used to make some chocolate cupcakes and cookies. Out of all my amazing recipes here I am sharing the finger linking good death by chocolate cupcakes. They are delicious enough to make you drool by just thinking of them. The most amazing thing about this recipe is melting chocolate. The melted chocolate will be used twice, one for baking and other form making glazed frosting. This melting chocolate is the hidden delicacy of this recipe.

This recipe is equally good for making cupcakes or a cake.

What you will need:

  • 12 oz.Mildly sweetened dark chocolate
  • 200 grams butter
  • 1 cup caster sugar
  • 1 tsp. vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 4 eggs
  • 1/3 cup of all-purpose flour
  • 1 tsp. light corn syrup
  • Sea salt

How you will do it:

  • The first thing is to preheat the oven at 300 degree F. So that the oven is just ready for baking when you end up with all the before bake preparations.
  • Grease the cupcake pan and put aside.
  • Take 9 Oz of dark chocolate and 150 grams butter and melt with the double boiler method (put the water in a big pan and place it on the stove on medium to low speed. Then put the chocolate in another bowl and placed it in water. Reduce the flame to very low before the water starts boiling.)
  • Beat the eggs one by one with an electric beater on medium speed until light and fluffy. Then add cocoa powder, vanilla essence, sugar & flour and beat until smooth.
  • Add the melted chocolate and butter mixture in the eggs mixture and mix until well combined.
  • Put the mixture into the cupcake pan and leave half of the space from the top, allowing the cupcakes to raise well.
  • Bake for 15- 18 minutes or until springy to touch.
  • Let the cupcakes cool and the place them on a wired rack.
  • Now melt the remaining butter and chocolate with the corn syrup with the double boiler method and let it cool. Now dip the top of cupcakes in this delicious glaze and sprinkle sea salt on the top. You can also add chocolate flakes for garnishing.
